This study investigated the effects of storage and the grinding process of wheat grains treated with the insecticide deltamethrin, applied at two different concentrations (1 and 2 mg/kg). The distribution and disappearance of pesticide residues in the stored grains were evaluated over a period of 240 days. The study employed the QuEChERS method for pesticide extraction, and utilized HPLC-PDA for residue level determination. The results obtained showed a significant efficacy of this method, with a recovery rate exceeding 75%. Additionally, the data showed variability in residue concentrations based on the concentrations used and the analyzed sample type, with residue levels in the bran being higher compared to the kernel itself, showing higher rates of 2.99 and 2.34 times for the two studied concentrations, two hours after treatment. It was also observed that the rate of pesticide disappearance was faster at the concentration of 1 mg/kg compared to 2 mg/kg. The acceptable daily intake (EDI) values for pesticide residues in wheat grains and ground products were calculated, with the highest dietary exposure recorded at the concentration of 2 mg/kg, two hours after treatment, although this later decreased to a safe level based on FAO/WHO standards. No pesticide residues in the grains or ground products exhibited any consumption risks, 60 days after storage. Based on the findings obtained, the study recommends the use of wheat grains or ground products treated with deltamethrin only 60 days after storage, to ensure consumer safety.
